Dinner a few nights ago but could also be an awesome easy lunch: avocado, tomato and hummus sandwich.

Hay all! This is dinner from a few nights ago, it is sweet potato stuffed shells.
I just boiled a cut up, peeled sweet potato until soft and then mashed it with some earth balance, nutritional yeast, salt and pepper. Then stuff the cooked shells, top with some daiya and bake until mostly melted.
We had this with a side salad.
