Dinner a few nights ago but could also be an awesome easy lunch: avocado, tomato and hummus sandwich.
Straight forward, delicious, easy.
Hay all! This is dinner from a few nights ago, it is sweet potato stuffed shells.
I just boiled a cut up, peeled sweet potato until soft and then mashed it with some earth balance, nutritional yeast, salt and pepper. Then stuff the cooked shells, top with some daiya and bake until mostly melted.
We had this with a side salad.
This morning I was feeling super lazy, so we made mixed berry scones from trader joe’s. just add water and throw them in the oven until they look done.
We slathered them in some strawberry champagne jam, which was found at the park avenue festival this passed weekend.
We also ventured out to Powers family farm in pittsford (for honey and too many cookies and petting of farm animals) and I was a little surprised to see this:
I found this recipe for lentil soup from this site and it was great! We added some curry powder and some extra salt.
I kind of made this recipe up. I used one bag of cooked trader joes orzo, one carton of their tomato and red pepper soup, chopped up and sautéed two tomatoes and 1/4 an onion, and put it all in a pot with some sriracha sauce and sour cream and called it a night. It was a winner!
